Title: Potato and Smoked Chicken Hash

Yield: 4 Servings

2tbOlive oil
1 Onion, chopped
1clGarlic, chopped
2cCubed, cooked potatoes
2cSmoked chicken, diced
1tbJalapeno tabasco sauce or
  1 tsp. tabasco
2tbMilk or yogurt
  Salt to taste
3tbChopped fresh coriander

Heat oil in non-stick skillet. Add onion and garlic; cook gently until tender. Add potatoes; increase heat and brown lightly. Add chicken and mash together slightly with potatoes. Mash in Tabasco sauce and milk or yogurt. Season with salt. Add coriander. Taste and adjust seasonings if necessary. Source: The Toronto Star Newspaper.
